Once picked, grapes are delicately handled in both traditional and innovative ways with the emphasis on simplicity and care. Unwooded whites are made with the focus on primary fruit flavour retention. Chardonnay and other wooded wines are made using traditional methods, these include careful selection of French coopered barrels, barrel fermentation, extended maceration, whole bunch pressing and many other techniques. |

Concentration on the wines structure and complexity are paramount, wines are released when they can be enjoyed, but they must also have excellent cellaring potential. |
